Blueberry Muffins to die for!


Blueberry Crumble Muffins

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon

Directions

1.Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.


2.Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.


3.To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.


4.Bake for 20 to 25 minutes in the preheated oven, or until done.

This recipe was given to me by a good friend who never lets a delicious thing go by without sharing with me.  She got it from here: Muffin Recipe.  This is the best blueberry muffin recipe I've made or eaten.  Delicious!!  These were made Saturday in preparation for Sunday morning breakfast.  It was only after the fact that I realized it was Fast Sunday.  Therefore, they had to sit an extra few hours before we could partake.  By that point, several of the crumb toppings were missing, thanks in part to starving children who could not quite make the wait.  They were shadows of their former selves by the time I ate one.
 
I understand all to well the fascination and love of "crumble topping".  My mom used to make cobbler with the most delicious crumble topping: Butter, Brown Sugar, Oats, and Cinnamon.  When I thought no one was looking, I would frantically stuff as much as I thought I could get away with, into a baggie.  Then I put that baggie in another baggie (Emperor's New Groove reference), and put it down inside one of my mittens in my top dresser drawer.  Then I would casually walk back into the kitchen pretending I had JUST happened upon the dessert being made. "Well, this looks lovely.  Can't wait till it's done.", I would exclaim.  'But, I won't have to', I thought to myself.  *evil smirk, and anxious hand rubbing*  Seeing my very unbusiness, Mom would put me to work doing something or other and there were times I forgot about the crumble topping, waiting patiently in my drawer.  I don't know if patiently is the right word.  It would sweat, then cool, then harden, then crumble, then....mold.  And that was sad.  What a waste.  What a mess.  My sugar addiction started very early on, fueled by my mother's delicious snack making skills. 
 
Well, the tradition is alive and well.  Brityn singlehandedly balded about half the muffins.  Exclaiming the whole way how proud she was of herself for not breaking her fast by eating lunch.  Hmmm.  Somewhere along the way there has been a miscommunication.  Hope you enjoy the muffins as much as we all did!  I bet they are even better warm and topped with crumble!
