Corn Salad/Salsa
1 can corn drained
1 diced yellow pepper
1 diced green pepper
1 diced red pepper
1-2 diced tomatoes
1 small cucumber diced
1/2 C. mayo (or to taste)
1/2 C. Shredded Cheese *optional
*you can also add red onion, but I didn't care for it in this recipe
This is really a sweet, mellow salad. It can be eaten alone as a side dish, or as a salsa dip with Fritos Scoops!
Tonight we enjoyed it with BBQ'd hot dogs. This is Corbin's plate. He loves ketchup, can you tell? This recipe is going to be added to my BBQ side dishes. I absolutely love it! Try it out and let me know what you think.
On an unrelated note:
Kids did homework outside today. Not a lot of homework got done.

Recipe looks super yummy put everything on my grocery list so we will for sure be trying it this weekend. I long for spending time outside one day you can finally see grass and the next snow covers it again. I am so ready for flip flops and pretty toes.
I totally agree with Mandi!!! I cannot wait until it is warm enough to be outside with no snow... How fun for the kids! I bet they had a very fun time.

I love how as soon as it gets warm anything done outside is twice as fun and twice as exciting. That recipe looks really tasty and those hotdogs look really good even though it's 8:15 in the morning.
