What started out as this........

Soon became this......

Strawberry Freeezer Jam (my dad calls it dam jam).
I followed the recipe right out of the box of Sure Jell. The box looks like this......

You can find it over in the jello isle. The jam turned out so yum. It could have something to do with the unbelievable amounts of sugar that the recipe calls for. However, I am convinced that since it is homemade (and therefore basically organic), and made with love, it will be better (and better for you) than store bought. I tell myself something similar when I buy "all natural" ice cream, and then down four bowls in one sitting.
We then tried........

Strawberry fruit roll ups, a.k.a. "Fruit by the Foot".

Fruit Roll Ups
2 C. Fruit Puree ( you can also use apricots). Just puree in a blender then add:
2 T. Honey
1 T. Lemon Juice
Mix until well blended in the blender.
-Line 2 cookie sheets with parchment paper, spread puree mix thinly, and place in the oven at the lowest setting (my oven was 170 degrees). Let it cook until it's no longer wet. Could take a few hours. Just keep checking it. After it cools, roll it up and cut into pieces.

The kids were so amazed I made fruit by the foot in our own kitchen. I am hanging onto these moments when they are so impressed with me. They will be short lived I'm afraid!
Speaking of short lived, this little man is growing up way to fast. He looks more and more like his daddy every day. I had to post this pic that I thought looked so much like Kev.

That jam looks so good. I am impressed by your fruit by the foot. Did you manage to use all 13 lbs? We loved our strawberries. I want to go back and pick more. You make me want to make homemade jam. I have never made it.
We made jam with our strawberries too but I love the fruit by the foot. I just got another case of them so I know we will be making fruit by the foot soon. Yummy. My Aunt used to make that jam and I thought it was so good and amazing. I asked her how and was soo surprised to learn the recipe was on the box.
